Chili with Rice

List of Ingredients
- 1 lb. ground beef or turkey
- 1 chopped green pepper
- 1 package (1-3/4 oz.) chili seasoning mix
- 2 c. water
- 1 can (15-1/2 oz.) kidney beans, drained
- 1 can (15 oz.) tomato sauce
- 1 can (7 oz.) corn, drained (or 1 c. frozen corn)
- 2 c. Minute Rice, uncooked
Instructions
- Cook and stir ground beef or turkey, pepper and seasoning mix in a large skillet on medium-high heat til browned. Stir in water, beans and tomato sauce. Bring to a boil. Reduce heat to low, cover and simmer 10 minutes, stirring occasionally.
- Stir in corn; return to boil. Stir in rice and cover. Remove from heat and let stand 5 minutes. Stir.
Final Comments
Optional: serve with shredded cheese, chopped onion, sour cream and salsa.
