Chocolate Chip Oatmeal Cookies

- 1 c. plus 2 T. all-purpose flour
- 1 c. quick-cooking oatmeal
- 2 T. unsweetened cocoa
- 3/4 t. baking soda
- 3/4 c. (1-1/2 sticks) butter or margarine, softened
- 1/2 c. sugar
- 1/2 c. brown sugar, firmly packed
- 1 egg
- 1 t. vanilla extract
- 1 c. (6 oz.) chocolate chips
- 1/2 c. chopped nuts (optional)
Instructions
- Heat oven to 350 degrees.
- Grease non-teflon baking sheet (don't grease if teflon).
- Stir together flour, oatmeal, cocoa and baking soda in a small bowl.
- Beat together butter and both sugars in large bowl til light and fluffy. Beat in egg and vanilla. Stir in flour mixture until well-blended. Fold in chocolate chips and nuts. Drop by teaspoonfuls onto cookie sheet leaving 2" between cookies.
- Bake at 350 degrees 12 minutes. Let stand on cookie sheet 3 minutes, remove to rack to cool.
