Three-Cheese Chicken Bake

- 8 oz. lasagna noodles
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 3 T. butter or margarine
- 1 can (10-3/4 oz.) condensed cream of chicken soup
- 1 can (4 oz.) sliced mushrooms, drained
- 1/2 c. chopped pimento
- 1/3 c. skim milk
- 1/2 t. dried basil
- 1-1/2 c. cottage cheese
- 2 c. chopped, cooked chicken or turkey
- 1-1/2 c. shredded american cheese (6 oz.)
- 1/2 c. grated Parmesan cheese
Instructions
- Cook lasagna noodles in boiling, salted water according to package directions; drain well.
- Cook onion and green pepper in butter or margarine til tender. Stir in condensed soup, mushrooms, pimento, skim milk and basil.
- Lay HALF the noodles in a 13X9X9-in. baking dish; top with HALF each of the soup mixture, cottage cheese & chicken. Repeat layers of noodles, sauce, cottage cheese and chicken.
- Bake in a 350 degree oven for 45 minutes. Top with American and Parmesan cheeses, bake 2 minutes longer or til cheese is melted.
