Shrimp-Cucumber Dip

- 1 medium cucumber, unpeeled
- 1 c. cream-style cottage cheese
- 2 T. finely chopped onion
- 2 t. vinegar
- 1/2 t. prepared horseradish
- 1 can (4-1/2 oz.) shrimp, drained and coarsely chopped
- Assorted vegetables for dipping
Instructions
- Halve cucumber lengthwise; remove seeds and discard. Shread enough cucumber to make 1 cup; drain.
- Combine the shredded cucumber, cottage cheese, onion, vinegar and horseradish. Beat til smooth with electric mixer; stir in shrimp. Serve with vegetable dippers. Makes about 2 cups of dip or 32 one-tablespoon servings.
