    • 2 large baking potatoes (1-1/4 lbs. each)
    • vegetable cooking spray
    • 1/4 c. nonfat yogurt
    • 2 T. chives
    • 2 T. Parmesan
    • 1 T. milk
    • 1/2 t. salt
    • 1/8 t. garlic powder
    • dash of pepper
    • 1/4 t. paprika


    Instructions


    1. Wash potatoes and spray with cooking spray.
    2. Bake at 375 degrees for 1 hour or until done. Let cool to touch.
    3. Cut potatoes in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Set shells aside.
    4. Combine potato, yogurt and next 6 ingredients in a medium bowl; mash until light and fluffy. Pipe or spoon potato mixture into shells. Place potatoes on ungreased baking sheet. Sprinkle with paprike and bake, uncovered, 10 minutes or until thoroughly heated.
