    Oat Mocha Brownies

    List of Ingredients


    • 1/2 tsp instant coffee granules
    • 1/4 cup water
    • 1/2 cup butter
    • 1/4 cup baking cocoa
    • 1/4 cup quick-cooking oats
    • 2 eggs
    • 3/4 cup sugar
    • dash of salt
    • 1 T vanilla extract
    • 3/4 cup all-purpose flour
    • 1/2 tsp baking powder


    Instructions


    1. Combine coffee granules and water in a heavy saucepan; stir until granules dissolve. Add butter and cocoa; cook over low heat until butter melts and mixture is smooth, stirring constantly. Stir in oats; remove from heat. Allow to cool.

    2. Preheat oven to 350 degrees. Grease 9" square baking pan.

    3. Beat egg; gradually add sugar, beating constantly with a wire whisk until smooth and slightly thickened. Stir in chocolate mixture, salt, and vanilla. Combine flour and baking powder; stir into chocolate mixture and mix well.

    4. Spoon batter into a lightly greased 9" square baking pan. Bake for 20 minutes or until a wooden pick inserted in center comes out clean. Cool and cut into squares.
