    Tropical Bars in a Butter Coconut Crust

    List of Ingredients


    • Crust:
    • 1 C. coconut
    • 1 C. butter
    • 1/2 C. sugar
    • 1 1/2 C. flour
    • Filling:
    • 3 limes, quartered
    • 2 1/4 C. sugar
    • 4 eggs
    • 1/2 C. flour
    • 1 t. baking powder
    • 1 T. plus 1 t. vanilla


    Instructions


    1. Combine all crust ingredients and press onto bottom of 9x9 square pan. Bake 15 min at 350° F.
    2. Put all filling ingredients in the food processor and process until pureed.
    3. Pour over the baked crust and bake at 350° F. for 20-25 minutes.
    4. Cut only after cooling and sprinkle with powdered sugar and toasted coconut flakes.
