- Small corn or flour tortillas, two per sandwich
- Eggs, one per sandwich
- Olive or canola oil, or melted butter
- Spices, etc.: pepper, basil, dill, chives, onions, etc.
- Salt, cheese, salsa: optional (Try celery or popcorn salt
Recipe
Equipment:
- Spatula
- Small frying pan & cover
(Bottom of frying pan should be slightly narrower
than the diameter of the tortillas,
otherwise the eggs won't stay put!)
Procedure:
1. Pour oil or melt butter in pan.
2. Lay one tortilla in pan.
3. Empty contents of one egg onto tortilla.
4. Sprinkle on spices, etc. to taste.
5. Lay second tortilla on top of all that.
6. Cover. (Helps egg, etc. cook better.)
7. Fry-flip-fry until browned enough to be crispy.
8. Sprinkle/spread on salt, cheese, salsa. (Optional.)
