Peanut Butter Cup Cookies

- One stick butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- One large egg
- 1 1/2 cups flour
- 1/2 tsp. salt
- 1/2 cup peanut butter
- 1/2 tsp. vanilla
- 3/4 tsp. baking soda
- One 13 oz. package mini peanut butter cups
Instructions
- Cream together butter and peanut butter with sugar and brown sugar.
- Beat in egg and vanilla.
- Stir together flour, baking soda and salt.
- Blend into creamed mixture to make smooth dough.
- Heat oven to 375 degrees.
- Shape dough into one inch balls and place in mini muffin pan lined with papers.
- Bake for 10 minutes.
- Have mini peanut butter cups ready--press one in each cookie while they are still in pans and hot.
- Remove from pans after they have cooled. Enjoy!
