Chocolate Wafer Parfait

- 1 cup heavy or whipping cream
- 1/2 tsp. vanilla extract
- 40 chocolate wafers
Instructions
- 1. Pour the cream and vanilla into the mixing bowl. Using the electric mixer, beat the cream at medium speed until it is thick and fluffy, about 2 1/2 minutes.
- 2. Layer the cookies and cream in 4 parfait glasses by heaping 1 teaspoon of whipped cream into each glass and then adding 1 cookie. Add another teaspoon of cream and another cookie until the cream and the cookies are all in the glasses.
- 3. Cover the tops of the glasses with plastic wrap and refrigerate 2 1/2 hours before serving. Enjoy!
