Recipe Introduction


This is a sweet bread, great as a dessert. It will make 4 loaf pans or you can make it in a 9x13 cake pan (with some left over). A cream cheese icing tastes really good with it.





List of Ingredients



• 4 eggs
  
• 4 C sugar
  
• 1 C oil
  
• 3 C grated zucchini
  
• 3 1/2 C flour - PLAIN
  
• 1 1/2 tsp baking soda
  
• 1 1/2 tsp salt
  
• 1 tsp cinnamon
  
• 3/4 tsp baking powder
  
• 1 C raisins (opt)
  
• 1 C chopped nuts (opt)
  






Instructions



1. Grease and flour pan(s)
   
2. Mix together the first 4 ingredients
   
3. Add the remaining ingredients one at a time, mixing well after each.
   
4. Pour into pan(s)
   
5. Bake at 350* ~ 1 hr for loaf pans or 30-45 min for cake pan.
   






Final Comments


Test for done by inserting a knife into center. Bread is done when knife comes out clean.
