Crustless Pumpkin Pie

Recipe Introduction
I got the recipe from my friend Natalie who is a devoted Weight Watchers person. This is absolutely my husbands FAVORITE pumpkin pie recipe! Hope you enjoy it as much as he does!
List of Ingredients
- 1 - 15 oz. can of pumpkin
- 1 - 12 oz. can of evaporated milk
- 3/4 cup Egg Beaters (or 3 egg whites)
- 1/2 tsp. salt
- 3 tsp. pumpkin pie spice
- 1 tsp vanilla
- 2/3 cup sugar OR 1/3 cup Splenda Blend
Instructions
- Combine all ingredients and beat until smooth
- Pour into a 9" sprayed pie pan
- Bake at 400 degrees F for 15 minutes, then reduce heat to 325 degrees F for 45 minutes or until a knife inserted in the center comes out clean.
- Serves: 8
Final Comments
If any of you are fans of Pampered Chef bakeware, I always use my 10" deep dish baker to make this pie. I don't have to grease it and the pie always comes out looking really nice.
