Makes 12 muffins
1 8.5 oz. package corn muffin mix
1 15-oz. can Corned Beef Hash or Roast Beef Hash
½ cup finely chopped green onions and tops
½ cup grated Parmesan cheese
1 egg
½ teaspoon salt
Dash of pepperRecipe
Heat oven to 400°F. Prepare corn muffin batter according to package directions; stir in remaining ingredients. Fill greased medium-size muffin pans, filling each cup ¾ full. Bake at 400°F, 35 minutes or until golden brown.
