4 eggs
1 cup shredded Cheddar cheese
2-3 green onions, finely chopped
1 tsp butter
8 Frozen waffles
STRAWBERRY SALSA* warmed to taste
Sour cream to taste Recipe
Beat eggs in a medium bowl. Add cheese & onions mixing well. Melt butter in a large nonstick skillet, ad egg mixture & cook until eggs are set, stirring occasionally. Keep warm. Meanwhile prepare waffles according to package directions. Spoon equal portions of the egg mixture on 4 waffles, add salsa & sour cream, top with second waffle. Serve warm.

STRAWBERRY SALSA*
1 jalapeno pepper, minced, seeds removed
1 1/2 cup diced fresh strawberries
1/2 cup diced mango (or papaya)
2 Tbsp chopped fresh cilantro
1 tsp lime juice
Salt & pepper to taste
Pinch of sugar
Gently combine ingredients mixing well. Allow to sit at least 10 minutes, mix again, serve.
SERVINGS: 2 cups TIME: 15 minutes
SERVING TIPS: Will not refrigerate very long.
