Apple Walnut Cake

Makes about 15 squares.
4 cups cored, chopped apples (skin on or off)
2 cups sugar
2 eggs
1/2 cup oil
2 teaspoons vanilla extract
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 cup chopped walnuts
Mix apples and sugar, and set aside. Grease and flour a 13x9-inch pan. Beat eggs with oil and vanilla. Sift together dry ingredients and add to the oil and egg, alternating with the apple mixture. Stir in the walnuts. Spread in the pan and bake at 350 degrees F for about an hour, or until it tests done.
