Isla Mujeres Shrimp Pizza

Makes 4 to 6 servings
Ingredients
1 bread-style prepared pizza crust (12 inches)
1/4 to 1/2 cup prepared salsa
2 cups (8 ounces) shredded Monterey Jack or taco-flavored cheese
1 bag (8 ounces) frozen cooked shrimp, thawed and well drained
1 small tomato, seeded and chopped
2 tablespoons chopped fresh cilantro
1. Preheat oven to 450°F.
2. Layer pizza crust with salsa, half of cheese, shrimp, tomato and cilantro. Sprinkle with remaining cheese.
3. Bake 10 minutes or until cheese is melted and bubbly.
Variations Substitute pizza sauce for salsa. Add a seeded, minced jalapeño or red pepper flakes for extra heat, or canned corn and black beans for extra color and hearty flavor.
Serving Suggestion Chop extra tomato and cilantro and add to a bag of prepared salad greens for an easy Mexican side salad.
