2 cloves garlic
1/2 bunch fresh Italian parsley, stems removed
1 LB fresh carrots, peeled
2 Tbsp fresh lemon juice
2 Tbsp orange juice
4 Tbsp extra virgin olive oil
1/2 tsp salt, or to taste
Pepper to taste
Recipe
Place the garlic & parsley in a food processor & chop. Add the carrots, lemon & orange juice, oil, salt & pepper & process until the carrots are well chopped but not pureed. Adjust seasonings & serve.
