CHOPPED BEEF SANDWICH

List of Ingredients
1 cup cooked beef, finely chopped
1/2 up celery, finely chopped
4 thin slices of a large onion
2 Tbsp sweet pickle relish, drained
1 Tbsp lemon juice
Salt & pepper to taste
Italian salad dressing to moisten
LEMON BUTTER SPREAD *
4 sandwich rolls or sliced bread (8)
Recipe
Combine beef, celery, pickle, lemon juice, salt & pepper & enough salad dressing to moisten enough to make a spread, mixing well. Cut sandwich rolls in half & spread lemon butter spread on both sides of the bread. Add the filling and top with the onion & other slice of bread.

LEMON BUTTER SPREAD *
1/2 cup butter or margarine
1 Tbsp lemon juice
1 tsp chopped parsley
1/2 tsp chopped basil
DIRECTIONS: Mix well & refrigerate.
SERVINGS: about 1/2 cup TIME: 10 minutes
SERVING TIPS: Use as a sandwich spread instead of mayonnaise or spread on steak, fish, chicken or pork before broiling.
