1 Tbsp olive oil
4 boneless, skinless chicken breast, cut into small strips
Lemon pepper to taste
2 cups chicken broth
1 cup instant rice
1 can (16 oz) refried beans
1 Pkg (8 oz) cream cheese, softened
8 flour tortillas (8"), warmed
8 large leaves of romaine lettuce
1-2 jalapeno peppers, seeded, finely chopped
1 Tbsp chopped fresh cilantro

Heat oil in a large skillet & add chicken. Cook until browned. Add broth, rice & pepper. Bring to a boil, reduce heat, cover & simmer 15-20 minutes or until rice is tender & liquid is absorbed. Meanwhile heat beans according to label instruction. Divide cheese into 8 portions & spread over each tortilla. Add about 3 Tbsp beans, 1/3 cup chicken mixture, equal portions of cilantro then a lettuce leaf. Fold in sides of tortilla & roll up. Cut in half & serve with salsa of choice and topped with sour cream, if desired.
