    1 pound lean lamb stew meat
    2 tablespoons olive oil
    1 medium onion, diced (about 1 cup)
    1 rib celery, thinly sliced
    1 small red bell pepper, diced
    6 cups water
    2 red-skinned potatoes, diced
    1 cup cabbage, finely shredded
    1½ teaspoons salt
    ¼ teaspoon ground black pepper
    2 tablespoons oat bran

    Recipe



    Trim any excess fat from the lamb as needed.

    In a large pot, heat the olive oil over medium heat. Add the lamb and the diced onion. Saute, stirring, just until the onion becomes soft and translucent. Stir in the celery and bell pepper. And briefly sauté these vegetables with the meat and onion.

    Add 6 cups of water, then the potatoes, cabbage, salt, pepper and oat bran. Bring the mixture to a boil, then reduce the heat to a low simmer. Cook for 1 ½ to 2 hours, adding additional water if desired.
    Serves 4.
