1/2 cup crushed Ritz crackers
1/2 tsp salt
1/4 tsp pepper
1 large tomato cut into 1/4 inch slices
1 egg beaten
2 Tbsp butter
Recipe
Melt butter in a heavy skillet. In a shallow bowl combine cracker crumbs, salt & pepper. Dip tomato slices into the egg then into the crumbs to coat well. Fry about 2 minutes on each side or until golden brown. Remove to a paper towel to drain while additional tomato is cooked. Keep warm. Make a sauce in the same pan using your own white sauce recipe, except add some dill to the sauce. Serve tomatoes with sauce over the tomato slices.
