2 cups water
3 tablespoons margarine or butter
1/4 cup milk
2 cups Hungry Jack® Mashed Potato Flakes
2 teaspoons margarine or butter
1/2 cup chopped onion
2 cups cubed cooked chicken, turkey or beef
1 (1.25-oz.) pkg. taco seasoning mix
1/2 cup chunkystyle salsa
2 oz. (1/2 cup) shredded Cheddar cheese
8 (8-inch) flour tortillas, heated
Shredded lettuce, if desired
Chunky-style salsa, if desiredRecipe
1. In medium saucepan, bring water and 3 tablespoons margarine to a rolling boil. Remove from heat. Stir in milk and potato flakes with fork until well blended. Set aside.
2. Melt 2 teaspoons margarine in medium skillet over medium heat. Add onion; cook and stir until tender. Stir in chicken, taco seasoning mix and 1/2 cup salsa. Bring to a boil. Cook 2 minutes, stirring occasionally. Stir in cheese and potatoes.
3. Spoon about 1/2 cup potato mixture down center of each warm tortilla; roll up. Top with lettuce and additional salsa.
