    Zucchini Bread

    List of Ingredients


    • 3 1/4 cups flour
    • 1 tsp ground nutmeg
    • 1 tsp ground cinnamon
    • 3 cups sugar
    • 1 cup oil
    • 4 eggs beaten
    • 1/3 cup water
    • 2 cup finely chopped zucchini
    • 1 tsp lemon juice
    • 1 cup chopped nuts ( walnuts or pecans )
    • 1 cup Golden Raisins ( optional )


    Instructions


    1. Preheat oven to 350.


    2. In large bowl combine flour, sugar, nutmeg & cinnamon.


    3. In a separate bowl combine oil, eggs, water, zucchini, and lemon juice.


    4. Add nuts and raisins to wet ingredients.


    5. Mix wet ingredients with dry and fold in.


    6. Bake in 2 standard loaf pans, sprayed with pam or greased and floured, for 1 hour.




    Final Comments


    You can make this when the zucchini is fresh out of the garden and freeze it for later.
