Zucchini Bread

List of Ingredients
- 3 1/4 cups flour
- 1 tsp ground nutmeg
- 1 tsp ground cinnamon
- 3 cups sugar
- 1 cup oil
- 4 eggs beaten
- 1/3 cup water
- 2 cup finely chopped zucchini
- 1 tsp lemon juice
- 1 cup chopped nuts ( walnuts or pecans )
- 1 cup Golden Raisins ( optional )
Instructions
- Preheat oven to 350.
- In large bowl combine flour, sugar, nutmeg & cinnamon.
- In a separate bowl combine oil, eggs, water, zucchini, and lemon juice.
- Add nuts and raisins to wet ingredients.
- Mix wet ingredients with dry and fold in.
- Bake in 2 standard loaf pans, sprayed with pam or greased and floured, for 1 hour.
Final Comments
You can make this when the zucchini is fresh out of the garden and freeze it for later.
