Cabbage Casserole

List of Ingredients
- 1 lb ground beef
- 1/2 cup chopped onion
- 1 medium head of cabbage
- 1/2 cup uncooked rice
- 1 can cream of mushroom soup
- 1 can water
- 1 cup grated cheese
- 1 can rotel (mild)
- salt and pepper to taste
Instructions
- Cook meat and onion in a skillet over medium heat. Add salt and pepper to taste.
- Chop cabbage and place in the bottom of a 9 x 13 casserole dish.
- When meat mixture is brown, add rice to meat and onions, stirring well.
- Pour meat mixture evenly over cabbage. Mix soup, rotel and water and pour over meat and cabbage.
- Cover with foil.
- Bake 1 hour at 350 degrees.
- Top with grated cheese. Let melt before serving.
Final Comments
This can be doubled to make two 9 x 13 dishes.
