Ham & Potato Cups

List of Ingredients
- 1 tube (8-10 count) refrigerated buttermilk biscuits (not Grands)
- 1 cup fully cooked ham (cubed)
- 1 cup mashed potatoes
- 1 cup shredded cheddar cheese, divided
- 1/2 tsp. dried parsley flakes
- 1/4 tsp. garlic powder
Instructions
- Press each biscuit into greased muffin cup, covering the bottom and up the sides.
- In a large bowl, combine the ham, potatoes, parsley, garlic powder and 1/2 of the cheese.
- Spoon a 1/4 cup of ham mixture into each prepared muffin cup.
- Sprinkle with remaining cheese.
- Bake @ 350 degrees for 20-25 minutes or until lightly browned.
- Serve warm.
Final Comments
I have also used pepper jack cheese which gives it a little bit of a kick.
