    Ham & Potato Cups

    List of Ingredients


    • 1 tube (8-10 count) refrigerated buttermilk biscuits (not Grands)
    • 1 cup fully cooked ham (cubed)
    • 1 cup mashed potatoes
    • 1 cup shredded cheddar cheese, divided
    • 1/2 tsp. dried parsley flakes
    • 1/4 tsp. garlic powder


    Instructions


    1. Press each biscuit into greased muffin cup, covering the bottom and up the sides.


    2. In a large bowl, combine the ham, potatoes, parsley, garlic powder and 1/2 of the cheese.


    3. Spoon a 1/4 cup of ham mixture into each prepared muffin cup.


    4. Sprinkle with remaining cheese.


    5. Bake @ 350 degrees for 20-25 minutes or until lightly browned.


    6. Serve warm.



    Final Comments


    I have also used pepper jack cheese which gives it a little bit of a kick.
