Sister Melger's German Potato Salad

Recipe Introduction
An elderly lady at our church who is the epitome of frugality. She once told me how to cut down my husband's dress shirts to make an apron. Her German potato salad is legendary.
List of Ingredients
1 lb. bacon chopped ("it's cheaper and more flavorful if you use the bacon ends" she said.
1 onion, chopped
1 cup apple cider vinegar
1/2 c. brown sugar
1/4 c. flour
1 c. water
6-8 red potatoes ("red ones have more flavor"), cooked and cooled.
Recipe
Using a cast iron skillet, fry the bacon. Add the chopped onion to the bacon and cook till tender. Add the vinegar and brown sugar.
Mix the flour and water with a whisk. Stir in and cook till gravy is thickened, about one minute.
Turn off all the heat.
Add the cooked, cooled and sliced potatoes.
"Let this set a whole day as the flavor goes into the potatoes."
