Party Rice
1 T butter
2 T onion, finely chopped
1 small can sliced mushrooms, drained
2 T pimento, chopped
salt to taste
1 C chicken broth (or 2 chicken bouillon cubes diluted in 1 C water)
1 C instant rice
2/3 C frozen peas, thawed
¼ to ½ C celery, chopped (opt)
½ C golden raisins (opt)
Melt butter and sauté onion until golden. Add mushrooms, pimento and salt. Sauté for 5 minutes. Add chicken broth. Bring to a boil. Add rice. Cover; simmer on medium heat for 8 minutes. Cook peas until warm. Add to rice just before serving.
