Squash Casserole
1 lb. ground beef
2 medium onions, chopped
2 medium green peppers, chopped
1 can tomato paste
1 can or jar spaghetti sauce
¼ C water
8 to 10 small yellow and zucchini squash, sliced
parmesan cheese
sharp cheddar cheese, shredded
Monterey jack cheese, shredded
Brown ground beef in a large skillet; drain. Add the first 5 ingredients and simmer 10 minutes. In a 9 x 13 casserole dish place a layer of squash. Cover squash with a layer of sauce and a layer of cheese (using all three kinds). Repeat until all ingredients are used, ending with cheese. Bake at 350 for one hour. You can also add some lasagna noodles if not many squash are available.
