Zucchini Latkes
6 C zucchini, coarsely grated
2 T garlic, chopped
salt / pepper to taste
2 eggs, lightly beaten
1/3 C plus 2 T flour (or more as needed)
½ C veg. oil for frying
Combine all ingredients except oil. Drop zucchini mixture by heaping tablespoons and fry in a large skillet in oil over medium heat about 2 minutes per side or until golden brown. Flatten slightly with back of a spoon. Drain on paper towels. Stir batter before adding each new batch of latkes to skillet. If all oil is absorbed, add more to skillet as necessary.
