Company Breakfast
1 lb. sausage
1 C cheddar cheese, grated
1 1/2 C milk
6 slices white bread, cubed
1 tsp dry mustard
6 eggs, beaten
1 small onion, chopped (optional)
1 can mushrooms, drained and chopped (optional)
1/4 C green / red peppers or combo of both, chopped (optional)
Place cubed bread into a greased 9 x 13 casserole dish. Fry sausage and sprinkle over bread cubes. Saute onions, mushrooms, and peppers until tender. Sprinkle vegetable mixture over sausage. Sprinkle cheese over vegetables. Beat eggs, milk and dry mustard. Pour over bread, sausage, vegetables and cheese. Cover and chill overnight. Put in a cold oven and bake 45-60 minutes @ 350 degrees or until a knife comes out clean. Serves 8.
