4 medium size red potatoes, peeled and cubed, cooked until tender
1 (8 oz) carton sour cream
2 T green onions, chopped
2 to 3 tsp dijon or prepared mustard
¼ tsp salt / ¼ tsp white pepper
paprika
Drain potatoes well; mash. Combine potatoes and next 5 ingredients, mixing well. Spoon mixture into a lightly greased 1 quart casserole; sprinkle with paprika. Cover and bake at 350 for 15 minutes. Serves 4.
