Speedy Scalloped Potatoes
8 medium potatoes, pared and thinly sliced (2 quarts)
¼ C green pepper, chopped
¼ C onion minced
1 cam condensed cream of mushroom soup
1 C milk
2 tsp salt, pinch pepper
Alternate layers of potatoes, green peppers and onions in a greased 11 x 7 ½ inch baking dish or a 2 quart casserole. Combine remaining ingredients. Cover & bake at 350 for 45 minutes. Remove cover and bake 20 to 30 minutes longer or until potatoes are tender. Makes 8 servings. (I use about ¼ of a recipe)
