    List of Ingredients


    • 1 lb. summer squash (green or yellow)
    • salt
    • 4 eggs, well beaten
    • 2 cups grated Swiss or Monterey Jack cheese
    • 1 teaspoon dill, basil, oregano or tarragon
    • 1/4 cup grated Parmesan cheese
    • sliced tomatoes


    Instructions


    1. Coarsely grate squash into bowl. Sprinkle lightly with salt and let stand 10 minutes. Squeeze out all liquid.
    2. Preheat oven to 350 degrees F. In large bowl, combine squash, eggs, cheese and seasonings. Pour into greased 8 inch square baking dish and top with Parmesan cheese. Bake 30 - 40 minutes, or until quiche is set in center and edges are lightly browned. Serve with sliced tomatoes on the side.


    Final Comments


    2 1/2 to 3 cups steamed chopped greens (spinach, mustard, etc) may be substituted for squash.
