California Vegetable Quiche

List of Ingredients
- 1 lb. summer squash (green or yellow)
- salt
- 4 eggs, well beaten
- 2 cups grated Swiss or Monterey Jack cheese
- 1 teaspoon dill, basil, oregano or tarragon
- 1/4 cup grated Parmesan cheese
- sliced tomatoes
Instructions
- Coarsely grate squash into bowl. Sprinkle lightly with salt and let stand 10 minutes. Squeeze out all liquid.
- Preheat oven to 350 degrees F. In large bowl, combine squash, eggs, cheese and seasonings. Pour into greased 8 inch square baking dish and top with Parmesan cheese. Bake 30 - 40 minutes, or until quiche is set in center and edges are lightly browned. Serve with sliced tomatoes on the side.
Final Comments
2 1/2 to 3 cups steamed chopped greens (spinach, mustard, etc) may be substituted for squash.
