    Blueberry Pumpkin Muffins

    List of Ingredients


    • 1 2/3 cups flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1 teaspoon cinnamon
    • 1/2 teaspoon allspice
    • 1 cup solid pack pumpkin
    • 1/4 cup undiluted evaporated milk
    • 1/3 cup shortening
    • 1 cup firmly packed light brown sugar
    • 1 egg
    • 1 cup blueberries + 1 tablespoon flour


    Instructions


    1. Combine first six ingredients.
    2. Combine pumpkin and evaporated milk until blended.
    3. Cream shortening and sugar in large mixer bowl.
    4. Add flour mixture, alternately with pumpkin mixture, beating well after each addition.
    5. Combine blueberries with flour. Gently stir into batter.
    6. Bake in a 350-degree oven 40 minutes or until toothpick inserted into center comes out clean.


    Final Comments


    Makes one dozen muffins. I usually double the recipe.
