    Lemon Blueberry Bundt Cake

    List of Ingredients


    • 3 cups all purpose flour
    • 1 tablespoon baking powder
    • 1 2/3 cup sugar
    • 3/4 cup butter, room temperature
    • 3 large eggs
    • finely grated peel of one lemon
    • juice of one lemon
    • 2 teaspoons vanilla extract
    • 1 cup buttermilk
    • 2 cups frozen blueberries


    Instructions


    1. Preheat oven to 350 degrees. Butter and flour 10" Bundt pan.
    2. Whisk flour and baking powder together in a medium bowl.
    3. Using electric mixer, beat 1 2/3 cups sugar and butter in a large bowl until light and fluffy. Beat in eggs, one at a time. Beat in lemon peel, lemon juice and vanilla.
    4. Beat in dry ingredients, in three additions, alterantely with buttermilk, in two additons.
    5. Fold in blueberries.
    6. Pour batter into prepared pan.
    7. Bake until tester inserted near center of cake comes out clean, about one hour.
