Lemon Blueberry Bundt Cake

List of Ingredients
- 3 cups all purpose flour
- 1 tablespoon baking powder
- 1 2/3 cup sugar
- 3/4 cup butter, room temperature
- 3 large eggs
- finely grated peel of one lemon
- juice of one lemon
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 2 cups frozen blueberries
Instructions
- Preheat oven to 350 degrees. Butter and flour 10" Bundt pan.
- Whisk flour and baking powder together in a medium bowl.
- Using electric mixer, beat 1 2/3 cups sugar and butter in a large bowl until light and fluffy. Beat in eggs, one at a time. Beat in lemon peel, lemon juice and vanilla.
- Beat in dry ingredients, in three additions, alterantely with buttermilk, in two additons.
- Fold in blueberries.
- Pour batter into prepared pan.
- Bake until tester inserted near center of cake comes out clean, about one hour.
