Three Cheese Enchiladas
Three Cheese Enchiladas were a favorite of Malia's as a child. I've had the recipe since about 1988.
List of Ingredients
- 1 1/2 cups shredded Monterey Jack Cheese
- 1 1/2 cups shredded Cheddar Cheese
- 1 3 oz. package cream cheese, softened
- 1 cup picante sauce
- 1 medium red pepper, sliced
- 1 tsp. cumin
- 8 7-8" flour tortillas
- shredded lettuce
- chopped tomato
Instructions
- Combine 1 cup of the Jack cheese, 1 cup of the cheddar cheese, cream cheese and 1/4 cup of picante sauce, red pepper, and cumin; mix well.
- Spread 1/4 cup of the cheese mixture down the center of each tortilla; roll and place seam side down in a 13 X 9" baking pan. Spoon remaining picante sauce evenly over enchiladas; cover with remaining cheese.
- Bake at 350 degrees or until hot.
- Top with lettuce, tomato and additional picante sauce.
Final Comments
Serves four.
