Three Cheese Enchiladas

Makes four servings.
List of Ingredients
- 1 1/2 cups (6 ounces) shredded Monterey Jack Cheese
- 1 1/2 cups (6 ounces) shredded Cheddar Cheese
- 1 3-ounce package cream cheese, softened
- 1 cup Picante Sauce
- 1 medium red bell pepper, sliced
- 1/2 cup sliced green onions
- 1 tsp. cumin
- 8 flour tortillas, 7-8 inch
- shredded lettuce
- chopped tomato
Instructions
- Combine 1 cup of the jack cheese, 1 cup of the cheddar cheese, cream cheese and 1/4 cup of Picante Sauce, red pepper, green onions and cumin; mix well.
- Spread 1/4 cup of the cheese mixture down the center of each tortilla; roll and place seam side down in 13 X 9-inch baking pan.
- Spoon remaining Picante Sauce evenly over the enchiladas; cover with remaining cheese.
- Bake at 350 degrees for about 20 minutes or until hot.
- Top with lettuce, tomato and additional Picante Sauce, as desired.
