    Three Cheese Enchiladas

    Probably Pace Picante Sauce.


    Recipe Introduction


    Makes four servings.


    List of Ingredients


    • 1 1/2 cups (6 ounces) shredded Monterey Jack Cheese
    • 1 1/2 cups (6 ounces) shredded Cheddar Cheese
    • 1 3-ounce package cream cheese, softened
    • 1 cup Picante Sauce
    • 1 medium red bell pepper, sliced
    • 1/2 cup sliced green onions
    • 1 tsp. cumin
    • 8 flour tortillas, 7-8 inch
    • shredded lettuce
    • chopped tomato


    Instructions


    1. Combine 1 cup of the jack cheese, 1 cup of the cheddar cheese, cream cheese and 1/4 cup of Picante Sauce, red pepper, green onions and cumin; mix well.
    2. Spread 1/4 cup of the cheese mixture down the center of each tortilla; roll and place seam side down in 13 X 9-inch baking pan.
    3. Spoon remaining Picante Sauce evenly over the enchiladas; cover with remaining cheese.
    4. Bake at 350 degrees for about 20 minutes or until hot.
    5. Top with lettuce, tomato and additional Picante Sauce, as desired.
