    Raspberry Chicken Salad

    Recipe Introduction


    From Betty Crocker's Quick Dinners.


    List of Ingredients


    • 4 cups bite size pieces salad greens (iceberg, bibb, romaine or spinach)
    • 2 cups cut up cooked chicken
    • 1 cup fresh raspberries
    • 1/2 cups thinly sliced celery
    • 1/4 cup toasted sliced almonds
    • Raspberry Dressing:
    • 1 cup nonfat plain yogurt
    • 1/2 cup fresh raspberries
    • 1 tbsp. raspberry vinegar or red wine vinegar
    • 2 tsps. granulated sugar


    Instructions


    1. Toss salad greens, chicken, raspberries and celery; sprinkle with almonds. Serve with Raspberry Dressing and pepper.

    2. Note: To toast almonds, spread on baking sheet and bake in 350 degree oven for 3 to 5 minutes or until brown.

    3. Raspberry Dressing: Place yougurt, raspberries, vinegar and sugar in blender container. Cover and blend on high speed until smooth, about 15 seconds. Do not overblend.
