Raspberry Chicken Salad

From Betty Crocker's Quick Dinners.
List of Ingredients
- 4 cups bite size pieces salad greens (iceberg, bibb, romaine or spinach)
- 2 cups cut up cooked chicken
- 1 cup fresh raspberries
- 1/2 cups thinly sliced celery
- 1/4 cup toasted sliced almonds
- Raspberry Dressing:
- 1 cup nonfat plain yogurt
- 1/2 cup fresh raspberries
- 1 tbsp. raspberry vinegar or red wine vinegar
- 2 tsps. granulated sugar
Instructions
- Toss salad greens, chicken, raspberries and celery; sprinkle with almonds. Serve with Raspberry Dressing and pepper.
- Note: To toast almonds, spread on baking sheet and bake in 350 degree oven for 3 to 5 minutes or until brown.
- Raspberry Dressing: Place yougurt, raspberries, vinegar and sugar in blender container. Cover and blend on high speed until smooth, about 15 seconds. Do not overblend.
