    Coconut Pineapple Pie

    Just had to include this. I love pineapple and coconut. Hope
    you like it too.


    List of Ingredients


    • 1 cup sugar
    • 3 tbsp all purpose flour
    • 1 cup light corn syrup
    • 1 cup flaked coconut
    • 1 can(8 ounces) crushed pineapple, undrained
    • 3 eggs, beaten
    • 1 tsp vanilla extract
    • 1 unbaked pastry shell
    • 1/4 cup butter or margarine, melted


    Instructions


    1. In a large bowl, combine sugar and flour. Add corn syrup, coconut, pineapple, eggs, and vanilla; mix well
    2. Pour into pastry shell, drizzle with melted butter or
      margarine.
    3. Bake at 350 degrees for 50-55 minutes or until knife inserted near center comes out clean.
    4. Cover loosely if browns too fast. Cool on wire rack before cutting. Store in refrigerator.
    5. Yield 6-8 servings
