PEANUT BUTTER BANANA BARS

1 egg
1/4 c. reduced fat peanut butter
1 c. mashed ripe banana (about 3)
1/4 c. skim milk
1 tbsp. sugar substitute
1 c. flour
1 tsp. baking powder
1/2 tsp. saltRecipe
Preheat oven to 350. Spray an 8" square pan with cooking spray. In a large bowl, combine egg, peanut butter and banana. Mix until creamy. Stir in milk. In a small bowl, combine dry ingredients and add to wet ingredients. Mix just until combined. Spread batter evenly in prepared pan. Bake for 20 minutes or until a toothpick inserted in center comes out clean. Cut into 16 bars.
Makes 16 bars.
