1 1/4 c. Splenda granular
1/2 c. mashed ripe banana
1/2 c. skim milk
1/3 c. buttermilk or sour milk
1 tbsp. egg substitute
1 tbsp. unsweetened applesauce
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. salt
Recipe
Mix sugar and all wet ingredients in a large bowl. Beat to blend well. Stir in dry ingredients until well blended. Pour into muffin tins lined with paper liners or sprayed with cooking spray. Bake for 20-25 minutes at 350.
Makes 12 muffins.
