    ALL AMERICAN POTATO SALAD

    2 lbs. med sized red potatoes--unpeeled
    1/3 c. thinly sliced celery
    1/3 c. grated carrot
    1/3 c. finely chopped onion
    1 tbsp. plus 1 1/2 tsp. sweet pickle relish

    Dressing:
    1/3 c. fat free or reduced fat mayonnaise
    1/3 c. sour cream
    2 tbsp. spicy mustard
    1/4 tsp. black pepper

    Cut the potatoes into 3/4" pieces and place in microwave. Cover and cook at high power for 8 to 10 minutes, or until tender. Rinse with cool water and drain. Place the potatoes in a large bowl. Add the celery, onion, carrot and relish, and toss gently to mix. Combine dressing ingredients in a small bowl, and stir to mix well. Add the dressing to the potato mixture and toss gently to mix. Cover the salad and refrigerate for at least 2 hours before serving.

    Makes 8 servings
