    20 oz. can crushed pineapple
    1/4 cup sugar
    1 tbsp. lemon juice
    2 3 oz. pkgs. strawberry gelatin
    4 tbsp. cold water
    8 oz. pkg. cream cheese
    12 oz. can evaporated milk
    3 tbsp. sugar
    1 tsp. vanilla
    8 oz. carton whipped topping
    1/4 cup chopped nuts (optional)
    1/4 cup coconut, dyed red and green (optional)

    Recipe



    In saucepan mix together pineapple, 1/4 cup sugar, lemon juice, gelatin and water. Bring to a boil. Cool. Beat together cream cheese, evaporated milk, 3 tbsp. sugar and vanilla. Mix with cooked mixture. Fold in whipped topping. Pour into jello mold or 9x13 inch pan and chill. Sprinkle top with nuts and/or coconut.
