List of Ingredients
2 cups cooked regular rice
2 cups (1/2 lb.) shredded Cheddar cheese
3 cups grated carrot
2 eggs, beaten
2/3 cup milk
1 T. minced onion
1 tsp. salt
1/4 tsp. pepper
Recipe
Combine all ingredients, stirring well. Spoon into a greased 1 1/2 quart casserole. Bake at 350 degrees for one hour or until set. Yield: 6 servings.
