Spicy Sausage and Vegetable Frittata

8 oz. hot Italian sausages, casings removed
1 large red or green bell pepper, diced
1 cup shredded mozzarella cheese (4 oz)
1 medium zucchini, diced (1 1/2 cups)
6 large eggs
Recipe
Crumble sausage into a 10" non-stick skillet. Cook over medium heat 2
to 3
minutes, or until no pink remains. Add zucchini and bell pepper. Cook
about 5
minutes, stirring often, until vegetables re tender. Whisk eggs in a
large bowl.
Stir in cheese, pour over mixture in skillet and stir gently to
distribute
eggs evenly. Cook 4 to 6 minutes or until set on the bottom and sides
(eggs will
be runny in the center.) If skillet handle is plastic or wood, wrap in
foil
to prevent scorching. Broil frittata 4 to 6 inches from heat source for
3
minutes or until firm in center. Source unknown
