5 large tomatoes, cubed 6 oz fresh mozzarella, diced
2 cloves garlic, peeled & diced 1 lb. pasta
6 fresh basil leaves, coarsely chopped 1 T parsley
1 med. red onion, chopped fine Salt & pepper
1 cup olive oilRecipe
In med. bowl, combine tomatoes, garlic basil, red onion, salt & pepper. Add enough oil to cover tomatoes. Marinate 3 hours. Drain mozzarella, place in pasta serving bowl (allow to come to room temp). Cook pasta according to package directions, drain, and pour over mozzarella in bowl. Toss to melt cheese & then add tomatoe mixture and mix well. Sprinkle w/parsley & serve.
