    Rhubarb Cobbler with Dumplings

    We had lots of rhubarb in the garden when I was little and mom was always finding new recipes for rhubarb so I have lots of them as we have rhubarb in our garden too.

    List of Ingredients




    3/4 cup sugar
    2 tablespoons cornstarch
    1 cup water
    1/2 cup orange juice
    4 cup rhubarb
    3/4 cup flour
    1/4 cup oatmeal
    1-1/2 teaspoon baking powder
    1/2 cup milk
    2 tablespoon vegetable oil
    1 tablespoon sugar
    1/4 teaspoon cinnamon

    Recipe



    Mix first 2 ingredients and add water and orange juice. Cook over medium heat till thickened and bubbly. Add rhubarb. Cook and stir till mix boils, remove and cool.
    Mix flour, oatmeal and baking powder and add milk and oil and stir just till mixed.
    Transfer rhubarb to 2 quart casserole. Spoon dumpling mix in 8 mounds on top of rhubarb. Mix sugar and cinnamon and sprinkle over top.
    Bake and 425 uncovered for 20 minutes.
