Chess Pie
List of Ingredients
16 oz. Lite and Lively Cottage Cheese
3 pkgs. sweet and low
1 tsp vanilla
1 tsp. coconut extract
1 egg
1 can (20 oz.) crushed pineapple
1 tsp. lemon juice
1 env. knox plain gelatin
Recipe
Put pineapple juice and other ingredients, except pineapple and cottage cheese, into blender and blend well.
Add cheese and process again until smooth.
Put drained pineapple in the bottom of a 9 in. pie plate to form the "crust".
Pour cheese mixture over top of pineapple and sprinkle with cinnamon. Bake at 325 for 30 minutes or until set.
