2/3 C. Jiffy cornbread mix
2/3 C. flour
salt and pepper to taste
6 firm green tomatoes
1/2 - 3/4 C. canola oil
Recipe
Combine cornbread mix with flour, salt and pepper in a bowl.
Arrange tomatoes 1/4 to 1/2 inch thick (depending on whether you prefer crispy or softer tomatoes).
Dredge tomato slices in the cornbread mixture.
Pour oil to 1/2 inch depth in heavy skillet. Heat oil over medium-high heat. When oil begins to smoke, fly coated tomatoes until deep brown. Drain on paper towels and serve warm.
