This is one of those soups that you throw together without measurement.
List of Ingredients
Potatoes - chopped into bite-size pieces
chopped onions
salt and pepper to taste
liquid non dairy creamer
velveeta cheeseRecipe
1. Cook potatoes, onions, and salt and pepper together until almost soft. Drain and reserve liquid.
2. In reserved liquid, pour liquid creamer to make broth. Add velvetta cheese. Simmer on low till cheese is melted.
3. Add potatoes.
**VARIATIONS**
Can cook potatoes with or without skins
When serving, top soup with crumbled bacon and cheddar cheese
For basic potato soup, leave out cheese
